If I am to color over it and then let the roots grow out, what color would be best for this ordeal? Chocolate brown? Dark blonde? Light brown? BTW when I think of natural dark blonde, I think mousy. But I don't want my hair to be damaged from the constant lightening.

Go to a hairdresser and have your hair professionally colored...it may cost more than doing it yourself, but it will be well worth it, as she can mix colors and get one close to your own shade so it will be less noticable when it is growing out.

Try and dye it close to your natural color, or even a little lighter.
I would add layers while it grew out. You can trim the layers off later if you want, but they'll add texture while it's growing.
